Stuffed Avocado

Ingredients:

  • 1 avocado
  • 1/2 soy yoghurt
  • 1/2 lemon
  • 3-4 cucumber slices
  • 2-3 slices of smoked salmon
  • 1 pinch of pink Himalayan salt
  • Pepper
  • 1 teaspoon dill
  • 1/3 teaspoon turmeric
  • 1 pinch of chia seeds
  • 1 pinch of gomasio

Preparation:

  1. Cut the avocado in half lengthwise and remove the pit.
  2. Squeeze 1/2 lemon over the avocado.
  3. Dice the slices of smoked salmon and cucumber.
  4. In a bowl, combine the yogurt, salmon, cucumber and spices.
  5. Add the stuffing to the avocado hollows.
  6. Sprinkle the mixture with the chia seeds and gomasio.
  7. Serve and finally TASTE!
