Wash the spinach and put it in a pan without draining it. Squeeze in the garlic. Steam them, stirring, until they fall apart. Season with salt and pepper. Keep warm. (It is possible to use frozen spinach).
Bring water to a boil, adding a tablespoon of vinegar in a large saucepan. Turn off the heat. The water should no longer boil.
Carefully break the eggs and slip them into the boiling water.
