Protein Cookies with Sweet Potato

For 10 cookies

Ingredients

  • 100 g. mashed almonds
  • 100 g. sweet potato flour (http://www.nexmove.ch/)
  • 1 cc of vanilla
  • 40 g of dark chocolate chips
  • 2 tablespoons maple syrup, honey or coconut syrup
  • 2 eggs
  • 5 cl of almond milk
  • 1 half cc of baking soda
  • 60 g of chocolate whey

 

Recipe

  1. Preheat the oven to 170 °.
  2. Mix all the ingredients in a bowl. The dough should come off the bowl and form a ball (almond puree helps with this).
  3. Form regular sized balls.
  4. On a baking sheet lined with parchment paper, arrange the balls and lightly press them with the palm of your hand. Be careful, do not over press, cookies should be rather bulging.
  5. Cook 13 mins
  6. Let cool.
